It's rare that Nick Dewar really, really likes a salad.  However, if that salad includes blue cheese, Nick will love it.  This is that type of salad.

Made by Louwrens at Chris and Mardi's house (our old house) in Nassau for a great potluck reunion afternoon by the pool - June 2018.

3 pears sliced into thin wedges

2 red onions sliced into thin wedges

Salt & Pepper

15 ml honey

30 ml butter

2 packets of mixed greens

100 g pecan nuts roasted and chopped

50 g blue cheese crumbled

Blue Cheese Dressing

160 ml cream

15 ml olive oil

100 g blue cheese crumbled

- Heat oven to 200C

- Arrange pears and onions on a greased baking sheet and season to taste with salt and pepper. Drizzle with honey, dot with butter and roast until the pears and onions are soft starting to colour.

- Prepare the dressing by beating cream, lemon juice and olive oil together. Stir in blue cheese.

- Arrange salad leaves. Arrange pears, onions, pecans and blue cheese and drizzle dressing over.
