Served on New Year's Day at Chris and Mardi's

Made by John Paul - the best start to 2015

4 large eggwhites

1 cup of castor or finely ground sugar ( 30 sec in a food processor)

1/2 teaspoon of vanilla extract

1 teaspoon of white vinegar

1/2 tablespoon of cornstarch


Preheat oven to 250 F or 130 C


Beat the eggwhites at medium speed until soft peaks form.


Add the sugar one tablespoon at a time and continue to beat on high until the

meringue forms stiff shiny peaks.


Beat in the vanilla extract.


Using a rubber spatula fold in the cornstarch and vinegar.


Spread mixture,(approx 11/2 inches thick), on a baking tray lined with parchment paper and bake for 60-75 mins.Then open the oven door slightly and let cool.



For topping whip up 1 cup of heavy whipping cream and add 11/2 tablespoons of sugar and 1/2 tsp of vanilla.


Top with fresh berries and kiwi.
