Maple Fudge

Historically made in disgustingly large quantities and bagged by Sherry each year for the Canadian Booth at the International Cultural Festival in Nassau Bahamas.

Fun fact, this is also the weekend that we had our first date!

Sells for $1 per square but Nick eats about $10 worth before the festival.

8 oz unsalted butter
2 cups dark-brown sugar
5 oz evaporated milk (Cardinal Cream)
2 cups icing sugar
1 tsp vanilla

2 tbsp real maple syrup

OPTIONAL - 1/4 cup chopped walnuts

Over medium heat in a large saucepan, combine butter, brown sugar and cream stirring continually until boiling (about 5-7 minutes).

When boiling, continue to stir for a full 10 minutes.  Transfer mixture (it will be very very hot) to a mixing bowl.

Add icing sugar one cup at a time mixing on medium low with electric mixer for 5 minutes.

Fold in nuts. Pour into a greased 8x8" baking dish and chill for at least 1 hour.  Cut into squares.
