Lemon White Chocolate Cookies
When Layla and Troy (Tryla) come for coffee, there are always cookies. Mostly they come from a packet but sometimes Sherry makes cookies. These ones were fresh, delicious and a perfect match with hot coffee while enjoying a good chat and the view from our apartment in Panama City. Made March 2019.

Ingredients

1 cup Butter slightly cold, cut into cubes

2 cups Sugar

2 Eggs

1 teaspoon Pure Vanilla Extract

1 1/2 Tablespoon Fresh Lemon Juice

1 1/2 - 2 Tablespoons Lemon Zest may put more lemon zest for extra flavor

3 cups Flour
-
1 1/4 teaspoon Baking Powder

1/2 teaspoon Baking Soda

1/2 teaspoon Salt

2 cups White Chocolate Chips

*may put in a drop of yellow food coloring for color

Preheat oven to 350 degrees.

In a large bowl, cream slightly cold butter and sugar for 4 - 5 minutes until light and fluffy. Add eggs one a time, mixing well after each addition.

Add vanilla, lemon juice, and lemon zest and stir to combine. If using yellow food coloring, add it now.

Stir in flour, baking powder, baking soda, and salt and mix just until combined.

Fold in white chocolate chips.

Drop dough onto light colored baking sheet. Use a silicone baking sheet such as a Silpat or parchment paper.

Bake for 9-12 minutes. Sprinkle with sugar or white sparkling sugar, if so desired.
