Grilled Pork Tenderloin 

An easy main - can't go wrong and a group favourite.

Make lots so there are leftovers as Todd would do.

3 lbs pork tenderloins peeled

2 tbsp olive oil

1 tsp all purpose seasoning

1 tsp old bay seasoning

1 tsp cumin

1 tsp ground coriander

2 cloves garlic crushed

Salt & black pepper

juice of one lemon

Mix all the spices, oil and lemon juice in a bowl to make a paste. Spread over the tenderloins and let marinate for at least 30 minutes.  

 

Grill or pan fry on medium high for 7 minutes on one side, 4 minutes on the other.  Remove from heat and cover with foil.  Let rest for 10 minutes before slicing. Should be slightly pink in the middle.

Serve with Sautéed Mushrooms and roasted or mashed potatoes.
