Deluxe Grilled Cheese Sandwich

Sherry has perfected making these and Nick has perfected eating them.  

A handy quick meal when random island bachelors drop in or after a night out.

For 1 sandwich:

2 slices Rustic white sandwich bread

1/2 tbsp olive oil

1/2 tbsp butter 

6 oz shredded cheese - a blend is good - old cheddar, swiss, provolone

2 thinly sliced tomato slices

2 slices cooked bacon

some spring/green onion greens chopped

black pepper


Optional ingredients: caramilzed onion (thanks for the suggestion Heather), hot peppers,sauteed mushrooms, marmite (no not really),


Melt oil and butter in the pan. Place one slice of bread in the melted warm butter/oil. Top with 4 oz of the cheese, the tomato, bacon, onions and black pepper.  Top with second slice of bread.


Grill sandwich on both sides til golden and crisp - add more butter if needed for the second side. Once done put 1oz of the remaining cheese on the outside of the sandwich (each side) and grill for 1-2 minutes more until the cheese is crisp and brown.  


Let sit 1 minute before cutting.


Serve with ketchup, branston pickle, sriracha, chili sauce or HP.
