We don't always drink wine. We also have cocktails!
Mojito - Nick's Specialty
10 mint leaves
1/2 lime cut into wedges
2tbsp white sugar
1 - 1/2 white rum
1/2 cup club soda
Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.
Sherry's favourite drink to insist on being made for her and then leave on the bedside table overnight undrunk.
1 1/2 oz Scotch whisky
3/4 oz amaretto almond liqueur
Pour ingredients into an old-fashioned glass over ice and serve.
Note to reader - do not put plastic blender pitcher in the dishwasher - they melt and the bastard lid doesn't fit afterward. Better to get a glass one anyway.

1 1⁄2ounces white rum
1 ounce dark rum
1 1⁄2ounces coco lopez coconut cream(in can)
4 large chunks fresh pineapple
1 dash Angostura bitters
1 maraschino cherry, to garnish
1 pineapple slice, wedge, to garnish
Blend rum, coconut cream and pineapple with ice. Pour into glass and top with bitters. Garnish and serve
Prettiest of cocktails. Almost never see sunrises but if they look like these, we might consider them. Nah... back to bed.

2 ounces gold tequila
2 ounces orange juice
1/2 ounce grenadine
Pour tequila and juice over ice. Add grenadine - grenadine will settle to the bottom to give the signature "surnise" look.
